Lemon Curd


Here you go , and it's so easy , promise

You need 4 eggs , 4 lemons (grated rind & juice),4oz butter , 1lb caster sugar.

Put all the ingredients in a bowl and give it a good mix , then for the quick way (i always do it like this now) pop it in the microwave for 10 mins on high , but take out and give it a realy good beating ever 2 mins.

sieve into jar , keep in fridge and it will keep ok for 4 weeks ,thats if it lasts that long.

Not got a microwave then the bowl needs to go over a pan of simmering water. Stir until sugar has melted and curd has thickened. Then its done.

Makes about 1.5lb.

Why not try orange or lime just switch fruits

  1. I know how easy it is to make and how quickly it goes too! I usually end up making dbl a=so I can do a lemon curd pie we love this with custard yummy.

    Just been to the shop too i look fwd to seeing what you create from the shop!

  3. I made this (in the microwave) years ago at college and my teacher always said to make sure there was a pip in it so you could say 'well, it is home made' ;)
