That cake in the picture is one I have just started making and I thought some of you might just want to try it .So here is the list of what you need and what you do with it . When I made it for the weekend away we had it came straight out of the oven and into my car , so we had teh smell of it all the way to the cottage, which was an hours journey.First thing we did when we got there was to pop the kettle on , ice the cake and eat it.
6oz butter
500ml tub Greek yogurt
300g good lemon curd
3 eggs
zest n juice 1 lemon
8oz SR Flour
6oz golden caster sugar
200g punnet blueberries
5oz icing sugar
it goes in the oven at Gas 3 or 160c in a 2lb loaf tin
put 4oz yogurt , 2tbsp lemon curd , butter , eggs , lemon zest , flour and caster sugar in a mixing bowl and mix until a nice lump free batter (you can do it by hand or electric , it's up to you )
place half of mix in the tin spinkle on 2oz blueberries then rest of mix followed by another 2oz berries.
bake for 1hr 15mins , when cool turn out and mix icing sugar with enough of the lemon juice to make a thick , smooth icing , spread over cake top.
serve in slices with extra lemon curd, Greek yogurt and blueberries.
I dont buy lemon curd i make my own , it's very easy , and i will post the recipe for that tomorrow.
Very slimming !! But want a slice right now please !
